Makes 6 muffins
Ingredients:
Wet ingredients:
2 large riped bananas mashed
1 egg
20mL olive oil
Dry ingredients:
20g sugar
110g plain flour
pinch of salt
pinch of cinnamon
1/2 tsp bi-carb soda
1/2 tsp baking powder
1.5C roughly chopped walnuts
Walnut crumble:
3 tbs butter melted
3 tbs brown sugar
1.5C roughly chopped walnuts
Method:
1. Preheat oven to fan forced 175 degrees celcium
2, Mix wet ingredients together in a large bowl, Add dry ingredients and mix until just combined. Add walnuts in last and fold until just combined. Spoon into silicone muffin tray.
3. In a bowl, mix walnut crumble ingredients together. Spoon and top the surface of muffin batter with crumble.
4. Bake for 25 mins or until golden brown. The remove and allow to cool completely before serving.
