Lemongrass Pork



A great mid-week go-to dish to eat with rice.

Ingredients: 
1 tablespoon sunflower oil
4 tablespoons of lemongrass minced 
1 onion sliced
3 garlic cloves minced 
1 tablespoon minced chilli 
1 tablespoon oyster sauce
2 tablespoon 3 crab fish sauce 
2 tablespoon sugar 
1kg pork sliced (I like to use pork shoulder but any lean pork would do) 
2 tablespoon cornflour 
3 tablespoon water 
3 spring onion cut into 5cm chunks 

Directions: 
1. In a large pot heat oil with lemongrass, onion, garlic and chilli until aromatic. Add in pork and stir until colour changes to white. Add fish sauce, oyster sauce and sugar, stir and cover with lid and reduce flame and allow to cook for 10 minutes, stirring every now and then.

2. In a small bowl mix cornflour and water and pour into pot and stir throughout. 

3. Remove lid and continue cooking, allow juices to reduce until meat starts to brown. Add spring onions and continue cooking for 2 more minutes then remove from heat. Serve hot with rice.
